Recipe: Paleo Cauliflower Fried Rice

This recipe can be upgraded with all sorts of additions like chicken, shrimp, pork or tofu. Let me know your additions in the comments below!

Paleo Cauliflower Fried Rice

Ingredients

1 large head cauliflower (about 4 cups of “rice”)

2 eggs, scrambled

1 cup frozen peas

1 small yellow onion, diced

2 carrots, diced

2 scallions, sliced

4 tbsp liquid aminos

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp ginger, grated (use a micro plane, super easy)

  1. In a large pan, sauté onion and ginger medium high, until onions are soft, 2-3 minutes

  2. Add carrots, peas, garlic and cook until carrots soften and peas are heated through, 3-4 minutes

  3. Add cauliflower, scallions, eggs (pre-scrambled), aminos and sesame oil and cook for 5-7 minutes

  4. Serve hot. Tip: a little sriracha on this a great addition!
